FOG

Commercial Fats, Oils, and Grease (FOG) comes from grease and oil used in cooking and food prep and can have a significant impact on the city's sewers.  All restaurants and FOG producing businesses within the city are required to obtain and maintain a grease trap and apply for a FOG Permit.

Grease trap requirements and best practices can be found in chapter 40 of the Dallas City Ordinance.

FOG permits expire every December 31st and renewal applications are due every January 1st.

Exterior grease traps are required to be pumped and inspected on a quarterly basis. Interior grease trap inspections are done on a monthly basis but frequency may vary. It is the duty of the FOG permit holder to maintain accurate and up to date records of all cleaning and maintenance of the grease trap and provide a copy of the nonhazardous waste manifest to the Environmental Compliance Inspector.
